Ayrshire Potato Brunch Traybake

1 bag of Scotty Brand Ayrshire Potatoes
Half a punnet of mushrooms
1 tomato
4 sausages of your choice
2 slices of black pudding
3 eggs (optional)
drizzle of olive oil
salt and pepper


  1. Preheat your oven to 200c.

  2. Cube your potatoes (no need to peel) and add to a pan of salted boiling water - cook for around 5 minutes!

  3. While your potatoes are boiling, chop your tomato into wedges, pierce your sausages and cut the black pudding into quarters. Put all of these ingredients into an oven proof dish.

  4. Drain your potatoes and place these on top of the rest of the ingredients, drizzle with olive oil and season with lots of salt and pepper.

  5. Cook in the oven for 40 minutes (optional: when there's 5 minutes left on the timer fry the eggs and place on top to serve!

  6. Serve while hot straight from the dish and enjoy!
