Baby Hasselback's Wrapped in Bacon

Ingredients

1 bag Scotty Brand Baby Potatoes
1 packet streaky bacon rashers
1 packet of Rosemary approx 5 sprigs

Optional dip
Sour cream
Chives
Salt
Pepper

METHOD

  1. Preheat your oven to 200 degrees

  2. To hasselback your baby Scotty Brand Potatoes cut narrow slices, but stopping just before your base, use two chopsticks or forks either side to help.

  3. Cut your rosemary sprigs into smaller stems so you have enough for each potato.

  4. Wrap a bacon rasher round each potato and use the rosemary to keep it in place.

  5. Place your bacon wrapped potatoes into a baking tray and bake.

  6. After 20minutes check your potatoes and turn them for an even bake.

  7. Optional make a sour cream and chive dip. Mix 3 tablespoons of sour cream with half a teaspoon of salt and pepper, finely chop a small bunch of chives approx. 12 and mix together.

  8. Check you potatoes are cooked through.

  9. Serve and enjoy by themselves or as great festive appetizers or side dish.
