2 Scotty Brand Baking Potatoes
165g cream cheese
100g diced chorizo
10g chives
Sunflower oil spray
Salt and pepper to season
Use around 4-5 sprays of sunflower oil across the Scotty Brand Baked Potatoes so you can easily coat them. Salt and pepper to taste. Rub the seasoning and oil across both potatoes evenly.
Pop them in the air fryer at 200° for 45-50 minutes (depending on size). Turn these around halfway through cooking.
While the potatoes are cooking fry the chorizo in a dry pan on a medium/high heat until the oils release and the chorizo starts to crisp.
Set aside approximately one tablespoon of chorizo for later.
Mix the chorizo and chorizo oil into a bowl with your cream cheese until really well combined (the cream cheese should have changed in colour).
Check your potatoes and remember to turn them around halfway through cooking.
Finely chop your chives and set aside approximately one tablespoon for later.
Mix your chives roughly into your chorizo cream cheese.
Once the potatoes are cooked take them out of the air fry, slice a cross into the top of the skin and fluff out the potato in the centre.
Half the chorizo cream cheese across both potatoes, sprinkle over the extra chorizo and chives and enjoy!
