Cottage Pie

Ingredients

2 Scotty Brand Mashed Potato (chilled range)
2 tbsp oil
500g beef mince
salt & pepper
2 carrots
1 onion
3 stalks celery
1 tbsp mixed herbs
3 garlic cloves
2 tbsp tomato purée
1 tsp marmite
2 tbsp plain flour
1 beef stock cube in 500ml water
1 tbsp Worcestershire sauce
2 bay leaves
150g frozen peas
Parmesan, cheddar cheese, butter (optional topping)

METHOD

  1. Add some olive oil & mince to pan, season with salt & pepper and cook until browned then remove and set aside.

  2. Drizzle in a little more olive oil into the pan then add carrot, celery, onion (finely chopped), and mixed herbs and cook until softened (approx. 10mins)

  3. Add tomato purée and finely chopped garlic, fry for 2 minutes then and add bay leaves, marmite, and Worcestershire sauce.

  4. Stir through plain flour and then pour in beef stock.

  5. Simmer on medium heat for approx. 30 minutes until gravy has thickened.

  6. Remove bay leaves and mix through frozen peas for 5 mins.

  7. Cook Scotty Brand Mashed Potatoes in the microwave as per packet instructions.

  8. Add cottage pie mix to a pie dish, then layer hot mashed potato on top.

  9. Sprinkle topping of parmesan, cheddar cheese on top and add small cubes of butter (this will give it the golden brown topping) then bake in oven at 200C fan for 40 minutes.

  10. Serve and enjoy!
