Easter Egg Loaded Potato Skins

Ingredients

6 Scotty Brand Baking Potatoes
5 tbsp sour cream
A bunch of spring onion, sliced
200g cubed pancetta
150g grated cheddar
1 tbsp chives
Oil
Any toppings of your choice to decorate

METHOD

  1. Turn the oven on to 200c, prick the potatoes and coat with oil, then place on a baking tray and cook for an hour or until golden.

  2. Once cooked, remove from the oven and let them cool.

  3. While the potatoes are cooling, fry the pancetta in a pan until crisp and set aside.

  4. Once the potatoes have cooled down, slice the potatoes in half, scoop out the filling and add to a bowl.

  5. Add in the sour cream, chives, cheese, spring onion and pancetta, then mix well.

  6. Add this mixture back into the potato skins.

  7. Now it’s time to be creative! Grab as many ingredients or toppings as you like and decorate your potato eggs.

  8. Dig in and enjoy!
