Festive Loaded Chippy Chips

Ingredients

800g Scotty Brand Chippy Chips
Leftover turkey (or other meat from Christmas Day), shredded or sliced
Leftover pigs in blankets, sliced in half lengthways
Cambozola cheede (or other festive cheese), crumbled
Handful of chestnuts, roughly chopped
Leftover brussels sprouts, finely sliced
Cranberry sauce
Leftover turkey gravy
Parsley, chopped (or other leftover herbs)

METHOD

  1. Preheat the oven to 180°C fan/200°C.

  2. Place the Chippy Chips on a non-stick baking tray and bake for 30-35 minutes until golden and crispy

  3. Top with the leftover turkey meat, pigs in blankets, cheese, chestnuts and brussels sprouts and return to the oven for 5 minutes so the cheese starts to melt.

  4. Pile the chips on a large plate or platter, dollop over the cranberry sauce, drizzle over some leftover gravy and top with the chopped parsley.
