Leek & Potato Soup

Ingredients

5 Scotty Brand medium potatoes
3 leeks
2 reduced salt vegetable stock cubes
1.2l water
1 pinch ground black pepper
Butter

METHOD

  1. Wash the leeks and potatoes.

  2. Peel the potatoes and chop them and the leeks into bite size pieces.

  3. Dissolve the stock cubes in the water.

  4. Put the chopped vegetables into a large saucepan with the stock and bring to boil.

  5. Reduce the heat, season with pepper and simmer for 20 minutes.

  6. Serve hot.
