2 Scotty brand baking potatoes
A pack of bacon or Parma ham
2 tbsp truffle honey
1 tbsp Olive oil
2 tsp Rosemary
Salt and pepper
Garlic dip
1 spring onion


  1. Preheat the oven to 180c and line a tray with foil.

  2. Slice the potatoes into very thin pieces, preferably using a mandolin.

  3. Lay out the bacon or Parma ham onto a chopping board and place the potatoes along, allowing each slice to overlap slightly.

  4. Grab one end of the meat and begin to tightly roll across. Use a skewer to keep in place and pop on the tray. Use any excess potatoes to make love hearts and add to the tray too.

  5. Drizzle each with Olive oil, salt, pepper and rosemary. Cook for 18 mins.

  6. Remove from the oven and drizzle over the honey. Cook for a further 2 minutes if until crisp.

  7. Serve immediately with a spring onion stalk and the garlic dip.
