Spook-tacular Stuffed Peppers

Ingredients

2 Orange Peppers
200g Scotty Brand Baby Potatoes
225g Halloumi
1 Tsp Chilli Powder
1 Tbsp of Olive Oil
Pinch of Salt

METHOD

  1. If you do not have an air fryer, preheat your oven to 220'C.

  2. Dice your Scotty Brand Potatoes and halloumi into small cubes.

  3. Add your Scotty Brand Potatoes to the air fryer (or oven-proof dish) and drizzle over the olive oil, salt and chilli powder. Give them a good shake so they are evenly coated. Cook for 9 minutes in the air fryer (or 20 minutes in the oven).

  4. While the potatoes are cooking, chop off the top of your pepper and set it to the side - you will need this later for your lid. Remove the seeds of the pepper.

  5. Carve your peppers into your spookiest Halloween design using a sharp knife.

  6. Add the halloumi to the air fryer (or oven), giving the ingredients another good shake and cook for a further 3 minutes (or 5 minutes in the oven).

  7. Once the halloumi and Scotty Brand Potatoes are crispy, spoon them into the peppers. Put the pepper lid on top and put these back into the air fryer for around 5-8 minutes (or around 15-20 minutes in the oven).

  8. One your peppers are looking nice and roasted serve and enjoy!
