Baked Potato with Spiced Keema Beef

Ingredients

4 Scotty Brand baking potatoes
150g Scotty Brand frozen peas
500g beef mince
100-150ml soured cream
Oil
1 red onion, chopped
2 garlic cloves, grated or minced
Thumb of ginger, grated or finely chopped
1 tbsp curry powder
2 tsp garam masala
1 tsp chilli
1 tsp cumin
3 tbsp ketchup
Fresh coriander
Salt & Pepper

METHOD

  1. Preheat oven to 160 degrees fan then on an ovenproof tray, rub the potatoes in 1 tsp of garam masala and oil then a little sea salt and cracked black pepper.

  2. When hot, put the potatoes into the oven and bake for 75-90 minutes, turning halfway through, until golden and soft.

  3. While the potatoes are baking, heat a small splash of oil in a pan or casserole dish on the hob over a medium heat, then add the red onion and cooking for 3-5 minutes until they start to soften. Once done, add the beef mince and brown for about 3-5 minutes

  4. Add the garlic and ginger and mix through cooking for a further few minutes before adding the dry spices (1 tbsp curry powder, 1 tsp garam masala, 1 tsp chilli powder, 1 tsp cumin).

  5. After a minute or so, add 3 tbsp ketchup and mix well, then cover with a lid and simmer for 5-10 minutes until a thick consistency is achieved.

  6. Just before serving, add the frozen peas directly into the mixture.

  7. Remove the baked potatoes from the oven and slice a horizontally and vertically to open it up.

  8. Add the keema beef mixture to the potato and top with sour cream and fresh coriander.

  9. Serve and enjoy!
