Cherry & Chocolate Blondies

Ingredients

200g Scotty Brand Cherries (stones removed)
110g unsalted butter, melted
170g soft brown sugar
1 large egg
2 teaspoons vanilla extract
140g plain flour
1/2 teaspoon salt, optional
150g chocolate chips (milk or white)

METHOD

  1. Preheat oven to 180C / Fan 160C / gas mark 4.

  2. Line an 8-by-8-inch (20cm x 20cm) pan with grease-proof paper and set aside.

  3. In a medium microwave-safe bowl, melt the butter, for about 60 seconds, until it's liquid. To the melted butter, add the brown sugar and stir to combine.

  4. Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix, or the blondies will be tough.

  5. Fold in the chocolate chips, fruit (chop into halves or use them chunky and big) and spoon the mix into your prepared pan, smoothing it to an even depth with a spatula.

  6. Bake in the preheated oven for 30 mins, or until there's only a slight wobble in the middle. If your oven runs cool they could take another ten minutes or so. The slight wobble is the best indication or readiness.

  7. Leave to cool in the tin. When you slice into portions you're looking for a lovely fudgy texture.

Notes: To stone the cherries, use a half unfolded paperclip.
