Chorizo, Pea & Potato Pasta

Ingredients

200g Scotty Brand Baby Potatoes
80g Dried Pasta
65g Chorizo
80g Peas
400g Chopped Tomatoes

METHOD

  1. Chop the potatoes into small cubes and add to a pot of water along with the pasta and bring to the boil.

  2. While the pasta and potatoes are boiling heat a frying pan on a medium heat then add the chorizo to the frying pan and cook for 1-2 minutes until the oil starts to release.

  3. Add the frozen peas and cook for a further 3-4 minutesl.

  4. Add the chopped tomatoes to the frying pan and turn the heat up to high, let this simmer until the sauce starts to thicken (around 5-7 minutes).

  5. Drain the pasta and potatoes and add to the frying pan and mix well.

  6. Serve and enjoy!
