Fish and Chippy Chips

Ingredients

300g Scotty Brand Chippy Chips
Fish:
2 Fish fillets of choice
350g Plain Flour
3 Eggs whisked
300g Breadcrumbs

Sauce:
200g mayonnaise
3 tbsp capers
3tbsp chopped gherkins
1 small shallot diced finely
Generous squeeze of Lemon juice
3tbsp Parsley
pinch of salt and pepper

METHOD

  1. Prepare and cook the chippy chips as per packet instructions.

  2. Prepare a station for preparing the fish by adding the whisked eggs to a bowl, and place your flour and breadcrumbs to two additional bowls.

  3. Coat the fish in flour and then dip in the egg followed by the breadcrumbs to create a breadcrumb coating. Then dip the fish back into the egg and then coat in the breadcrumbs again for an extra crispy coating.

  4. Add the fish to the oven or air fryer along with the chips and cook until golden - approx 15 minutes.

  5. While the fish and chips are cooking, prepare your sauce by adding the mayonnaise, chopped capers, chopped gherkins, finely chopped shallot, lemon juice, chopped parsley and seasoning into a bowl and mix well until combined.

  6. Once everything is ready, serve while hot with a fresh wedge of lemon.
