Pea & Feta Puffs

Ingredients

200g Scotty Brand Peas
120g frozen spinach thawed & dried
1 tbsps olive oil
½ Onion finely chopped
2 eggs
2 heaped tbsp dill, finely chopped
150g feta, crumbled
2 tsp Lemon zest
2 cloves garlic minced
100g cream cheese
Ready-rolled puff pastry
Cracked black pepper & Sea salt to taste

METHOD

  1. Fry the onion in the olive oil over medium heat until softened, add the garlic and cook until fragrant, then remove from the heat.

  2. Cook the Scotty Brand Peas according to packet instructions, drain and roughly mash with a fork.

  3. In a large bowl mix the cream cheese and 1 egg. Stir in the garlic & onion mixture, peas, spinach, feta, dill & lemon zest and season with salt and pepper.

  4. Grease a muffin tray with oil. Roll out the puff pastry on a lightly floured surface cut into squares and put them in the muffin tray with the edges hanging over. Add roughly 2 tsps. of the filling to the centre of each. Refrigerate for 30mins.

  5. Preheat the oven to 180, beat the remaining egg in a small bowl and glaze the chilled pastry before baking for 20-25mins, let them cool before removing from the tray.

  6. Serve and enjoy!
