Pea, Pancetta and Lemon Pasta

Ingredients

200g Scotty Brand Peas
50g salted butter
1 x pack pancetta
1 x onion
3 x cloves garlic
Zest from 1/2 x lemon & 1 x tbsp juice
250g pasta and 2 x ladles pasta water
100g mascarpone
Handful spinach
75g parmesan
Salt & pepper

METHOD

  1. Melt butter in pan, add finely chopped onion and start to soften.

  2. Add pancetta and continue to cook until fat starts to render then add garlic and cook for another few minutes.

  3. Pour in frozen Scotty Brand Peas, followed by lemon zest and lemon juice.

  4. Cook pasta in salted boiling water until al dente and retain a couple of ladles of pasta water and add to the pan.

  5. Wilt spinach in pan with pasta water.

  6. Mix through mascarpone and parmesan before tossing through cooked pasta and seasoning to taste with salt & pepper.

  7. Enjoy!
