Potato stacks

Ingredients

1kg Scotty Brand Potatoes
30g butter
2 garlic cloves, finely chopped
125ml double cream
1tbsp fresh thyme
75g gruyere cheese
75g parmesan cheese
77g pack of bacon pieces
Cracked black pepper & Sea salt to taste

METHOD

  1. Preheat oven to 180 and grease a muffin tin with butter.

  2. Fry the bacon pieces and set aside.

  3. Heat the butter and add the garlic, cook until fragrant add the cream and bring to a simmer, simmer for 30seconds and remove from the heat.

  4. Thinly slice the Scotty Brand Potatoes ready to assemble the stacks.

  5. Place the potato slices in the prepared tray until they are halfway full, drizzle each with a 1tsp of the cream mixture then top with cheese.

  6. Top each stack with the remaining potato slices, cream and thyme cover with foil and bake for 40mins until the potatoes are cooked through.

  7. Top with the remaining cheese and bacon pieces and bake for 10mins until golden.

  8. Garnish with thyme, allow to cool slightly and remove from the tray & serve.

  9. Enjoy!
