Punchy Peas on Toast

Ingredients

1 bag Scotty Brand Frozen Peas
Bread
Feta
Fresh or dried chilli
Olive oil
Unwaxed lemon
Salt
Coriander - optional

METHOD

  1. Cook your peas for 2 minutes as per instructions, roughly half a cup per person.

  2. Once cooked, mash your peas with a drizzle of olive oil, juice, and zest of half a lemon plus a sprinkle of salt.

  3. Toast your bread.

  4. Layer the peas on the toast, then top with crumbled feta, a squeeze of fresh lemon, and chilli.

  5. Enjoy
