Scotch Broth Soup

Ingredients

1 packet of Scotty Brand Scotch Broth Soup Mix
1 tablespoon vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 bay leaf
1.5 liters vegetable or beef broth
Salt and black pepper to taste
Fresh parsley, chopped, for garnish (optional)

METHOD

  1. In a skillet, heat the Scotty Brand Scotch Broth Soup Mix and vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until the vegetables are softened.

  2. Transfer the sautéed vegetables to the slow cooker.

  3. Pour in the vegetable or beef broth, ensuring that the soup mix is well-covered. Add the bay leaf for extra flavour.

  4. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the Scotch Broth Soup Mix is tender.

  5. Season the soup with salt and black pepper to taste. Adjust the seasoning as needed.

  6. Ladle the Scotch Broth Soup into bowls. Garnish with chopped fresh parsley if desired.

  7. Serve the Scotch Broth Soup hot, and savour the comforting flavours of this slow-cooked, classic Scottish dish.
