Slow Cooker Lentil Soup

Ingredients

1 packet of Scotty Brand Vegetable & Lentil Soup Mix
1 onion, finely chopped
3 cloves garlic, minced
1.5 litres of vegetable or chicken broth
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley, chopped, for garnish (optional)

METHOD

  1. In the slow cooker, combine the Scotty Brand lentil soup mix, chopped onion, minced garlic, and vegetable or chicken broth.

  2. Stir in ground cumin, ground coriander, smoked paprika, salt, and black pepper to taste.

  3. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the lentils are tender.

  4. Taste and adjust the seasoning if needed. Add more salt, pepper, or spices according to your preference.

  5. Ladle the lentil soup into bowls. Garnish with chopped fresh parsley.

  6. Serve the slow cooker lentil soup hot, and enjoy the hearty and flavourful goodness.
