Smoked Salmon and Avocado Breakfast Toast

Ingredients

150g Scotty Brand Smoked Salmon
4 slices of whole-grain bread
2 ripe avocados
1 lemon, juiced
Salt and black pepper to taste
4 large eggs
Chopped fresh chives for garnish

METHOD

  1. Peel and pit the avocados. In a bowl, mash the avocados with a fork.

  2. Add lemon juice, salt, and black pepper to taste. Mix well.

  3. Toast the whole-grain bread slices to your liking.

  4. Fill a pan with water and bring it to a gentle simmer.

  5. Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide the egg into the centre. Poach for about 3-4 minutes until the whites are set but the yolks are still runny.

  6. Remove the poached eggs with a slotted spoon and place them on a plate lined with kitchen paper to absorb any excess water.

  7. Spread a generous layer of avocado smash on each slice of toasted bread.

  8. Arrange slices of Scotty Brand Smoked Salmon on top of the avocado.

  9. Carefully place a poached egg on each toast.

  10. Garnish with chopped fresh chives and any optional toppings you prefer.

  11. Serve the Smoked Salmon and Avocado Breakfast Toast immediately, while the eggs are still warm.

  12. Enjoy!
