Smoked Salmon Salad with Avocado & A Herby Honey Dressing

Ingredients

100g Scotty Brand Smoked Salmon
½ an avocado
1 small sweet gem lettuce
Juice of half a lemon
Small handful of chives (around 5-8)
Small handful of parsley
Small handful of dill
3 tablespoons of olive oil
1 teaspoon of honey

METHOD

  1. First make the dressing by combining the olive oil, lemon juice and honey. Finely chop the herbs then add to the dressing and stir well, add salt and pepper to taste.

  2. Wash the sweet gem lettuce and tear the leaves from the stalk.

  3. Remove the avocado pit and skin and slice.

  4. Arrange the lettuce, avocado, and Scotty Brand Smoked Salmon in a bowl.

  5. Drizzle over the herby honey dressing and enjoy.
