Smoked Salmon Tacos & Avocado Salsa

Ingredients

half a red onion diced
2 avocados cut into small chunks
10 baby plum tomatoes quartered
2 tbsp olive oil
salt & pepper
Half a lime
200ml soured cream
handful of fresh chives diced
2 packets of Scotty Brand smoked salmon
small bag of rocket lettuce
6/8 small tortilla wraps

METHOD

  1. Add the avocado, red onion and tomatoes to a bowl. Stir in 2 tbsp olive oil, the juice of half a lime and salt & pepper to taste. Mix well and set aside.

  2. Add 200ml of soured cream to a bowl with the chopped chives then mix well and set aside.

  3. Cut the smoked salmon into small ribbons.

  4. Build your tacos by starting with a handful of rocket, then some avocado salsa, add some smoked salmon ribbons and top with the sour cream & chive sauce.

  5. Enjoy on their own or add a few drops of hot sauce to give it a bit of heat!
