Spicy Tandoori Hash

1 Bag of Scotty Brand Baby Potatoes
1 Heaped tsp Spice Pots Tandoori Masala Spice mix
1 Red Bell Pepper Diced
2 Spring Onions
2 Rashers Bacon, diced (or you can use pancetta)
4 Medium Eggs
Handful of Kale
Olive Oil
Salt & Pepper


  1. Boil your potatoes for 10 minutes (keep the skins on to reduce waste!).

  2. Meanwhile, prepare your veg and dice your bacon.

  3. Mix together your spices with 1 tbsp Olive Oil. Transfer potatoes to a baking tray and gently crush with a fork or masher. Brush your spice mix on top and drizzle with more olive oil. Bake for 12 mins.

  4. While they bake, gently fry your bacon and pepper together in a pan, until the bacon is crispy and the peppers soften.

  5. Once your potatoes are finished, transfer to your pan. Add kale and spring onions.

  6. Create four wells in your pan and crack in four eggs.

  7. Season to your liking and bake for a further 10 minutes.
