Spinach and Pea Burger

Ingredients

150g Scotty Brand Peas
200g spinach leaves
1/2 onion, finely chopped
200ml green lentils
75g oats
1 tbsp chopped parsley
1 tsp chopped garlic
Salt and pepper, to taste

METHOD

  1. Steam your Scotty Brand Peas until they're tender.

  2. In a pan over medium heat, sauté the finely chopped onion until it's golden and translucent then add in the garlic.

  3. Toss in the fresh spinach leaves and let them wilt.

  4. In a bowl, combine your steamed Scotty Brand peas with the oats and lentils. Then, add in the sautéed spinach and onion mixture. Give it all a good stir.

  5. Add a sprinkle of salt and pepper to taste. Mix it well until the mixture sticks together.

  6. Now it's time to shape your mix into burger patties.

  7. In a pan over medium heat, add a splash of olive oil to keep things from sticking.

  8. Gently place the burger patties in the pan and cook each side until they're golden and crispy.

  9. Season with chopped parsley.

  10. Serve them up on buns with your favourite toppings.

  11. Enjoy!
