Summer Fruit Crostada

Ingredients

Selection of Scotty Brand cherries, strawberries and raspberries
10 sheets of filo pastry
70g melted butter
1 tub ricotta cheese/or double cream
Pinch of salt
3 tbsp honey
1 tbsp vanilla extract
1 tbsp icing sugar

METHOD

  1. Preheat oven to 160c.

  2. Brush the filo pastry sheets generously with butter then, using a tart dish, layer the sheets ensuring the dish is covered. One complete bake for 15-18 minutes or until golden.

  3. One cooked, remove from oven and set aside to cool completely.

  4. While the pastry is cooling, in a bowl add the ricotta, salt, honey and vanilla extract and whisk until light and airy.

  5. Once the pastry has cooled down, spread the ricotta evenly and garnish generously with the berries.

  6. Sprinkle with some icing sugar to serve.
