Smoked Haddock Bake

2 packs of Scotty Brand Cheddar Mash (400g)
240g Smoked Haddock Fillets (Skinless and Boneless, Natural Smoked)
1 Leek, thinly sliced
200g Scotty Brand Garden Peas
Half Reduced Salt Stock Cube (Vegetable)
150ml Water
1 pinch Ground Black Pepper


  1. Preheat the oven to 190°C / 170°C fan oven / 360°F / gas mark 5.

  2. Prepare and cut the fish into approx 20mm cubes and place in an ovenproof dish.

  3. Wash and remove outer layer of leek and then slice finely, approx 10mm strips.

  4. Add the leeks along with the Scotty Brand Garden Peas and a pinch of black pepper.

  5. Dissolve the stock cube in boiling water and then pour over the fish and vegetables.

  6. Heat the Scotty Brand Cheddar mash as per pack instructions, mix the mash with a fork and gently spoon it on top of the fish. Fluff it with a fork to create peaks.

  7. For extra flavour, sprinkle additional mature cheddar cheese on top of the mash.

  8. Bake in the pre-heated oven for 30 to 40 minutes. Serve once golden and crisp.
